Ancestral Taste.
Distilled in Copper.
“Different to an industrial distillery, more than a neutral spirit, we are Moroccan spiritmakers. In strict fidelity to centuries of Essaouira cellar tradition, we transform sun-cured Mediterranean figs and wild green aniseed into an eau-de-vie of crystalline purity, velvety richness, and restorative warmth.”
Sun-Warmed Fig Blossom
Ripe Souss Valley black figs, wild honey, and sweet dough lifted by freshly crushed green aniseed and Atlantic salt air.
Caramelized Fig Confiture
Viscous, velvety coating mouthfeel. Natural fig sweetness, toasted walnuts, and a vibrant copper warmth that spreads cleanly across the palate.
Cooling Licorice & Salinité
Long, refreshing herbaceous glow with cooling anise crystals and a faint oceanic mineral finish native to Essaouira’s coastal cellars.

FOUNDED IN 1774, MOGADOR ESTATE REAWAKENS CENTURIES OF SACRED TRADITION TO DELIVER AN ANCESTRAL SPIRIT OF UNCOMPROMISING TASTE.

Our Heritage
Essaouira has pressed its figs for centuries, but it is our people and our patience that make Mogador Estate Mahia different for all the right reasons. A tradition that reaches back before Prohibition still lives on in our cellars beneath the medina walls — founded 1774, and kept the old way ever since.

WE DO NOT RECTIFY GRAIN. WE DO NOT BLEND SHORTCUTS.
WE CAPTURE WHAT COPPER FIRE AND SUN-DRIED FIGS HAVE PRESERVED FOR OVER
TWO CENTURIES.
How We Make Our Mahia
One fruit, one copper alembic, and the patience of a cellar carved beneath Essaouira. We ferment sun-dried Souss figs whole and distil them twice through our double alembic — no rectified grain, no added sugar, no shortcuts. Only what the fruit, the fire and the Atlantic air have preserved. One way — the ancestral way.

The Distiller’s Gazette.
Original essays, tasting monographs, and historical accounts exploring the revival of ancestral Moroccan eau-de-vie, wild Mediterranean fig harvests, and Atlantic cellar maturation.
The Sacred Geometry of the Copper Alembic: How Souss Figs Become Liquid Memory.
Before entering our wood-fired stills, wild Mediterranean figs undergo forty days of open-air dehydration on raw cedar frames under the Souss sun. Here, we deconstruct the delicate thermodynamics of the curved swan neck, the capture of essential aniseed oils, and why high-rectification industrial spirits can never replicate the soul of ancestral Moroccan Mahia.
Atlantic Terroir
The Trade Winds of Mogador: How Oceanic Air Shapes Spirit Viscosity.
Rested within glass demijohns along Essaouira’s centuries-old bastion ramparts, our spirit absorbs the maritime atmospheric pressure, imparting a crystalline mineral salinité to the sweet fig finish.
